How to Make Sally's Baking Addiction's Funfetti Layer Cake
Sally's Funfetti cake is fairly simple, but it does require a few bowls to make. You'll start by greasing and flouring three cake pans, then whisking together flour, baking powder, baking soda, and salt. Using an electric mixer, beat softened butter until smooth. Add sugar and beat until super light and fluffy. With the mixer running, gradually mix in four whole eggs, then vanilla extract. Add the flour mixture in three additions, alternating with buttermilk, until a smooth batter forms. In another bowl, whisk egg whites until they are fluffy and hold soft peaks. Fold the whipped egg whites into the batter, then stir in sprinkles. Bake the cakes until a toothpick comes out clean.
While the cakes are cooling, make the frosting: Using an electric mixer, beat softened butter until smooth and creamy. Add confectioners' sugar, cream, vanilla extract, and salt, and beat until smooth and fluffy. Assemble the cakes and frost as desired.

My Honest Review of Sally's Baking Addiction's Funfetti Layer Cake
This cake was seriously delicious. It had a nice light texture but was still super moist. The vanilla flavor was bold without being overpowering, and the whole cake was sweet without being cloying. I also loved how easy the frosting was to make, and how smoothly it went onto the cake. It was easy to make beautiful swooshes and was perfectly fluffy.
My only critique is that whipping the egg whites in a separate bowl is a bit tedious. Some of the other recipes I tried don't require this step and still came out light and fluffy, so I had to knock a point off. Other than that, this cake is practically perfect, and would be an excellent choice for a birthday cake.

If You're Making Sally's Baking Addiction's Funfetti Layer Cake, a Few Tips
- Opt for cake flour instead of all-purpose. At the bottom of the recipe, Sally includes a note about using cake flour in place of all-purpose, which I think would make these cakes even more light and tender.
- Line your cake pans with parchment paper. While the recipe states to grease and flour your cake pans before baking, I always line mine with parchment paper as well. This is just added insurance that your cakes won't stick.
- Make sure all of your ingredients are at room temperature. This will ensure the batter comes out perfectly smooth. Before baking, set all of your ingredients on the counter for one hour and you'll be good to go.
